Last year we picked up our first coffee from the Aquiares Estate in Costa Rica. The coffee was crisp and solid, but to be honest we were more attracted to what Diego Robelo was doing at the farm than the coffee itself. To our surprise, it turned out to be one of our most popular coffees. When we ran out of it we received countless messages asking "Where did it go!?", and we told them, "If the quality is there next harvest we will bring it back"... and it was, so we did. The cup profile is almost identical to last years crop - a crisp pear-like acidity with a great round nuttiness.
The Aquiares Estate is a leader in sustainability - it is Rainforest Alliance certified and has been carbon neutral since 2016. Furthermore, Diego has worked to create a sustainable community at the Estate. Overtime, he's sold off many of the properties on the farm so that now the workers and their families own their own houses and live there year round.
