Fresh crop Colombia's are coming in and we are excited. It's an origin that consistently produces some of the most balanced and tasty coffees. This is the first time we're working with Carmelo, so we've only brought in a limited amount of his coffee (it won't last long!). This is a Java, a traditional Ethiopian varietal, that we've brought to a medium roast. It's a classic cup with a little zest. We're getting notes of roasted nuts, dates, and brown sugar.

Carmelo moved from Bogota to Santa Maria in 2003 to dedicate himself to coffee production. However, it wasn’t until 2013 that he decided to focus on specialty coffee, looking for different avenues to sell his coffee. For the past several years, Carmelo has been focusing on different varieties, as well as different fermentation experiments. On top of that, he has been focused on improving his infrastructure, the wet-mill and drying beds, in order to remain consistent in the production of higher quality coffees. This java coffee is the result of these investments, and you can definitely taste how it's paid off.
