We were loving the Xico lot from Veracruz, but were bummed out because of how little of it we were able to source. So we turned back to our partners in Mexico looking for another similar option, and we came across this Puhuac lot from Puebla, a neighboring region. The flavor profile and roast profile are very similar to the Xico we had. We are getting dark chocolate, nutty candy bar, and toasted nuts. 

One thing that makes the state of Puebla unique in Mexico is that it supports producers with agronomic education and resources. For instance, one project provided collapsible raised drying beds with ventilated airflow systems for producers to dry their coffee more evenly and consistently. This is well above and beyond the level of assistance we’ve seen for smallholder producers in Mexico, and it’s materially impacted the cup quality. 

The coffees that make up this Puhuac lot come from many small holder farmers in the Zapotitlan de Mendez region. This region is divided into 2 areas by the Zempoala River, the northern area with strong Totonaca influence and the southern area with strong Nahuatl influence. Many producers here speak their indigenous language as well as Spanish.
These communities are working towards organic certification, and this will be the first year that they’re exporting their coffee in order to increase profitability and capture more value. We are thrilled to have this coffee with us, and look forward to building a relationship with this community over the years to come. We've contracted a good amount of this coffee so it will be sticking around for a while!
