Cosautlan, derived from the Nahuatl language meaning "Place of Gold", is one of the oldest and most important coffee-growing regions in Veracruz, Mexico. Unlike many mountainous coffee regions, Cosautlan's gentler terrain allows producers to cultivate slightly larger farms, averaging 3–5 hectares.
The community's remote location presents both challenges and advantages. While access to healthcare and employment opportunities can be limited, the surrounding forests remain remarkably preserved. Coffee producers work closely with the natural environment, growing coffee beneath native shade trees such as banana and ice cream bean trees.
Harvesting is a family effort, with producers selectively picking ripe coffee cherries and transporting them by mule, truck, or ATV to a centralized processing facility in the town of Cosautlan.
After harvest, the cherries are washed using fresh spring water and fermented for 48 hours in concrete tanks. The coffee is then mechanically dried for approximately 60 hours, producing a clean, sweet cup that highlights the region's natural character.
