Mafafas is a washed community coffee from the town of Mafafas in Veracruz, Mexico, produced by smallholder farmers working at elevations between 1,350 and 1,800 meters. Grown in a region shaped by cool northern winds and dramatic temperature shifts, this coffee reflects both resilience and care at every stage.

In the cup, Mafafas is sweet, smooth, and comforting, with flavors of praline, cocoa, and pecan. The profile is low-acid and balanced, making it an easy-drinking option for those who gravitate toward nutty, chocolate-forward coffees.

After harvest, cherries are transported to a central mill in Coatepec, where they’re washed with spring water, fermented for 48 hours in concrete tanks, then fully washed and mechanically dried for 60 hours. This controlled process creates clarity and consistency across the community lot.
